Lemon crepes on their own maybe sound simple, but they taste really good and make for endless opportunities. You can add cream, lemon curd or homemade fruit sauce.
Lemon crepes ingredients:
- 1/2 cup flour
- 1/2 cup milk
- a pinch salt
- one egg (optional)
- lemon zest/lemon juice
- powdered sugar
Mix all ingredients in a big bowl and blend. Refrigerate for at least 30 minutes. Once the butter has set, heat a pan and add butter.
Pour some batter into the center of the pan and swirl around to spread evenly. Cook for around 30 seconds, flip and cook for another 10 seconds.
Move on a large cutting board to cool and continue until all the butter is gone.
Dust with powdered sugar fold and dust again.
